As summer makes an appearance so does the BBQ season! It’s time to dust off those flips flops, slap on the sun screen and fill the social calendar with lazy days and a sausage or two… or maybe three!
I happened to come across an article in a recent Jamie Oliver magazine about a new restaurant in London’s Borough Market called Padella and sounded right up my street! Unfortunately they don’t take bookings, so I took Jamie’s advice and joined the queue. After a short wait we were in and warming up with a nice glass of vino.
The menu is small, but this doesn’t make deciding which delicious dish to have any easier… Eventually I settled on the slow cooked beef shin with pappardelle pasta which was (in my opinion) a taste sensation!
So as you can imagine, the first thing I wanted to do when I got home was try and recreate this deliciousness.
I have very fond memories of my Nonna filling up bottles (often beer bottles) and jars with tomatoes and preserving these tasty little fruits, she would do this every year without fail right into her later years and considered it to be a very important job in preparation for the winter.
Times have changed and you can pick up a tin of tomato’s or bottle of passatas in almost any local super market, so why would you bother to make your own which is a very time consuming process when you get the same result out of tin… Well, apart from being a nostalgic process which transports me to hot summer evenings in Italy were I can still smell all the delicious flavours in the air…The taste of freshly preserved tomato’s just doesn’t compare to anything you can buy.
